Kitchen Krafts - Asparagus

Today I want to share a really yummy asparagus soup recipe with you.
I grew up with asparagus in a tin and I didn't know that you could actually buy them raw, cook them and love to eat them.
I discovered them a few years into living in Europe - Wow, I didn't know what I was missing out on.
Not only are they great to eat but they have such amazing health benefits!
Did you know that Asparagus detoxes your system? When you visit the loo you will notice a distinct "Asparagusy" smell almost immediately after eating  :D
This is just one of the amazing benefits.
To get you into the yumminess of this great veg, here is a recipe for a creamy asparagus soup, that should sell you on them!

You will need:
500g green asparagus (peel the bottom third and cut off the bottom edge if woody)
500ml vegetable stock
200ml sour cream
Salt and Pepper to taste
Peel the bottom third off the stems and cut off the woody edges.

Chop into pieces
Bring the vegetable stock to the boil and add the asparagus. Allow to simmer until the asparagus is soft.
Once the pieces are soft, whiz till smooth.
Add the sour cream
Enjoy!
