This weeks' Tutorial is based on today's' date: 13th December - St. Lucia's Day - a Swedish celebration.
St. Lucia is the symbol of light and the ceremony is so rich in the symbolism of Light. We celebrated our St. Lucia Festival yesterday at work...why then you ask, well because it was convenient ;) as we were all there!
It started with our Lucia adorning her head with her candle crown, and then the group went through the house at 7:00am waking up all the inhabitants of the house with song.
Once everyone was awake, they all convened in the dining hall to have breakfast together, including the typical Saffron Buns - another symbol of light.
Today I want to share this recipe with you, to bring a little light into your lives and festive season.
Saffron Buns
1 Cup Milk
125g melted butter
3/4 Cup of Sugar
1 tsp Salt
1 packet of Saffron (powdered)
2 packets of Yeast
6 cups of Flour
2 Eggs beaten
Add the saffron to the melted butter.
Allow to stand for 30 minutes.
Bring milk to the boil and remove from the heat. Add the sugar, salt and butter.
Allow to cool and then add yeast. Allow to stand for 10 minutes.
Add 3/4 of the flour to the liquid.
Add the eggs and the raisins.
Mix until you get a nice doughy consistency, adding more flour as you need to to get a nice smooth dough.
Stand, covered for approximately an hour, until the dough has doubled in size.
Remove from the container, form and place on the tray.
Cover and allow to double in size again.
Place in a pre-heated oven at 180 Degrees Celsius.
Bake for 15-30 minutes until brown.
And there you have baked sunshine.....Enjoy!
