Kitchen Krafts - Sosaties

Welcome to this week's Kitchen Krafts. 
Today I am going to share another typically South African Recipe - brilliant for your next Braai (BBQ)
Sosaties are similar to kebabs, ie. meat and other goodies on skewers. The prep for this takes 4-7 hours, preferably overnight!
Let's get started!


Ingredients for the Marinade:
2 Tbsp Sugar
6 Tbsp Apricot jam
2 Tbsp Curry Powder
25ml White wine vinegar
3 cloves of garlic chopped or crushed
2 Bay leaves
2 tsp salt
1 tsp pepper
1 Tbsp Cornflour
3 - 4 medium onions, peeled and quartered

Add all ingredients to a pot and bring to the boil.
Once it has thickened, place it into your marinade dish to cool slightly.

For the sosaties you will need:
1kg leg of lamb or mutton
1kg pork
250g dried apricots
Skewers
Peppers

Place the apricots in a container and cover with water and allow to swell overnight.
Cube the meat and place it in the marinade dish with the marinade, cover completely with the marinade and place in the fridge.
The next day:
Make the sosaties ready before you braai:
How you put the sosaties together is really up to you :-D I put mine together like this:
Pepper, Lamb, Apricot, Pork, Onion, Pepper.
Cook on the braai and enjoy with potato salad, maize and all your usual braai trimmings!
